This particular dish seems to have a daunting effect on some but it's super easy, healthy and delicious peanut satay that takes only a couple of minutes to make! It's perfect for any busy day to have as dinner or lunch and is one of my go-to meals. If you haven't made this before then why not try out something new? Pleasantly surprise your household members!
The great thing about this recipe is that you can implement the zero waste habits discussed in the previous blog post (if you haven't seen it, check out how to help save our planet). This is a great opportunity to use whatever vegetables you have leftover in your fridge and conjure up something special! Here's a few suggestions: any colour bell pepper, spring onions, carrots, courgette, aubergine, green beans, baby corn, leeks, anything really!
Although this is a healthier version of the dish and some of us are calorie conscious, don't even bother for veggies because they are low in fat, calories and they're nutritious.. so just enjoy them! Like I mention in my video below, rice noodles are a healthier alternative to standard egg noodles due to fewer calories, less fat and they're also gluten-free! They can really help you eat the carbs you want to feel full and satisfied with minimal fat impact.
Enough blabbering, here's the recipe:
1 tsp of honey
1 tbsp of soy sauce (i used med-dark but you can use light too!)
1 tbsp curry sauce
3 tbsp of palm-oil free smooth or crunchy peanut butter
1/2 a lime squeezed
160ml of water
